2 MINUTE DONUT BUN


This recipe is a take-off from my 2 Minute Coconut Bread recipe.  I've just added some sweetener, some nutmeg and cinnamon, and a powdered sugar (Truvia) topping to it to make a delicious, very donut tasting muffin or bun or cake, whatever you like to call it.  I used my microwave egg muffin container that I bought from Walmart very cheap.  This is quick and easy to put together in the morning, or the night before so it's all ready for you in the morning.  Would make a nice Easter morning treat to take along with you if you are invited somewhere where they have only sugar and carbs to serve.  It's gluten free as well as only 3 g net carbs.






        2 MINUTE DONUT BUN

1 teaspoon  coconut oil
1 large  egg
2 tablespoons  warm water
2 tablespoons  parmesan cheese
1 tablespoon  coconut flour
1/4 teaspoon  baking powder
1/2 teaspoon  cinnamon
1/4 teaspoon  nutmeg
4 packets  truvia
        Topping
1 teaspoon  butter
2 packets  truvia

1 Serving/Per Serving: 229 Calories; 18g Fat (69.0% calories from fat); 12g Protein; 6g Carbohydrate; 3g Dietary Fiber

NOTES : 3 g net carbs

  1. Hi Ginny, this is very nice. I made mine in a wee dish as I can't get you little dish here in Scotland but it turned out good. You are right that the cheese is undetectable, I loved you coconut bread and use that as a slice for pizza and it just great. We are now getting truvia in our Asda store here before I had to get it mail order so it was a lot more expensive that way so getting in my store is great help, keep up the good work you are doing a great service to us, thank you so much. I will never again feel I have nothing in the house to eat not when you can make this in minutes it's a very nice sweet fix.

    1. That makes me so happy Rona, when my recipes can make a difference for someone! :) Thanks for sharing! :)That's great that you can get Truvia locally now! Some people make their own using erythritol and stevia together. For me, it's more convenient and cost effective just to use the Truvia, since I can get it 2 blocks away from home!

  2. I enjoyed this recipe. The Truvia on top tested off to me but I don't use Truvia that much. I will make again with Splenda in the bun and a squirt of sf syrup on top. Thanks!

  3. Some people like Truvia and some don't. It's probably the Stevia in it? Some people cannot taste the sweetness of Stevia and to them it is bitter or has an off taste. So whatever sweetener works best for you is fine! I tend to like xylitol and cinnamon together on top of it also. It tastes so much like sugar and cinnamon. Syrup would be great too! I've also done a powdered sugar substitute using 2 parts Splenda and 1 part xylitol in a coffee grinder or blender.

    You rock, I love following your blog, I made this bread this evening and it was so delicious and so easy, the parm cheese is not even detectable, I put a little sugar free pancake syrup on mine. Keep up the hard work, love your recipes, God has a special place in heaven for you.

  5. Hi Ginny,
    This was my first time using Truvia and it only tasted bitter on the topping. I use liquid and powdered stevia so was surprised I tasted bitterness. I'm going to try the powdered sugar substitute next!

  6. Hmmm that's interesting Elizabeth! Seems we all find our favorite sweeteners. As long as you find one that works for you! I hope the powdered sugar substitute works for you. :) Some people like powdered erythritol also. To me it's too cooling by itself, but others may like it.

  8. I LOVE this! I recently tried adding 2 cut up squares of Lindt 90% chocolate bar....oh my heavens! It tasted like a warm chocolate chip cookie. A HUGE warm chocolate chip cookie. Only added a negligible amount of carbs, and was amazing.

  9. This is S*U*P*E*R*B! I cooked it in my GT Xpress for about 8 minutes after dropping walnuts on top of it! I'm thinking turnovers! You are really a genius!

      Walnuts would be great on it! Maybe some of Maria's caramel sauce in the cookbook too!

    2. That's how I could make a turnover (walnuts and Maria's caramel sauce). I have Book 1 and Book 2 is on my Christmas list, and I want Book 1 spiral bound. I think that's reasonable, right?
