SAUSAGE AND CHEESE MUFFIN LOAVES
This was such an easy dish to throw together for supper tonight. Turned out quite tasty and we decided they are keepers. This went really well with my Creamy Corn and Cauli Casserole which you can find on Page 203 of Low Carbing Among Friends, Vol. 2, and a lettuce and kale salad.
SAUSAGE AND CHEESE MUFFIN LOAVES
1 pound Jennie-O turkey sausage (breakfast)
1 large egg
1/4 cup almond flour -- (I used Honeyville)
1/4 cup low carb Barbecue Sauce
1/2 teaspoon salt
2 sticks smoked string Cheese, (Baker is the brand I use)
2 tablespoons Real Bacon Bits
2 tablespoons Parmesan cheese
Preheat oven to 375 degrees F. In small bowl, combine turkey breakfast sausage, egg, almond flour, Barbeque sauce, and salt. Mix together well. Divide evenly into 12 greased muffin tins.
Cut string cheese sticks into 12 equal pieces by cutting into 3rds first and then each 3rd cut in half. Place 1 piece in the middle of each muffin. Sprinkle each with 1/2 tsp of bacon bits, and then 1/2 tsp each of Parmesan cheese.
Bake 30 minutes.
Variation: You can use pork sausage or ground beef or turkey as well if you prefer. Nutritional info would change.

Great idea! Sounds very tasty! Have a great week, Ginny. :-)
ReplyDeleteThanks Jennifer! You too!
DeleteThose look delicious! And I love having things like that ready to go in the am, that way I don't slip up and eat something I shouldn't.
ReplyDeleteMine didn't make it until morning, haha, but yes, I know what you mean!
DeleteThis one sounds absolutely delicious. I love sausage for breakfast and this adds an interesting twist to the traditional pattie.
ReplyDeleteHope you enjoy them!
DeleteI think I'll try a batch of these for breakfast, as they look great to grab-and-go. Thanks!
ReplyDeleteYeah, I'm thinking next time I take a trip, this will be one of the things to bring along. Hope you like them Luana!
DeleteGinny, all I can say is o-m-g, these are fantastic!
ReplyDeleteI confess: I altered your recipe a bit, ok, more like a lot. No turkey sausage in the house, so I used the 1 lb of spicy chicken Parmesan sausage that I had. I used 3 eggs and 1 cup of almond flour. No barbecue sauce (really don't like it), so I used a couple of squirts of Sriracha, no string cheese, used 1/4 cup of grated cheddar, and about 1/4 cup of Parm, also, no bacon bits, so omitted entirely. Mixed all together, and baked in 5 silicone baking cups that hold about 3/4 cup of mixture, and increased baking time to 45 minutes.
I confess; I rarely follow a recipe exactly, with a few exceptions, and I've found many really good recipes can stand modifications and serve as a guidline. Yours is a *really* good one. I'll use these for a grab-and-go breakfast. In fact I'll probably double recipe next time I make these to have a supply in the freezer. Many thanks!
LOL Luana! You are just like me... I very rarely ever follow a recipe exactly. Looks like you created your own recipe there. ;) Sounds great!
DeleteYour recipe sounds delicious too! I love spicy food and I've got to get some Sriracha since I've heard so many good things about it, and I know I will love it! Ginny is a great guide and you made something that sounds yumalicious!
DeleteOh. My. Wow! I can't wait to try this...might even throw it in the GT Xpress (LOL!)
ReplyDeleteI bet they'd warm up really nice in the GT Xpress!
