CHEESY TURNIP HASHBROWN BAKE


This is what we had for supper tonight along with some really great curry meatloaf from Jennifer's recipe in "Low Carbing Among Friends".  This is the second time we've had that meatloaf and it's fast become our favorite.

I needed a side dish, and didn't want to make a lot, but wanted something substantial to go along with this, and had just bought some turnips so my mind started working and I threw this together.  It came out really good.  My boys do not eat turnips, but I didn't give them the alternative of potatoes tonight, but just served it.  When asked what it was I just said, "hashbrowns".  They liked it.  I'm sure they could tell it wasn't potatoes, but they liked it.  It was really good, I'll have to say.


CHEESY HASHBROWN TURNIP BAKE                    

1 pound  turnips -- shredded
1/2 cup  fiesta blend shredded cheese
1/2 cup  Parmesan cheese
2 large  eggs -- beaten
1 teaspoon  garlic powder
1 teaspoon  onion powder
Salt and pepper -- to taste
1/4 cup  butter -- melted

Preheat oven to 400 F.  In 9 x9-inch glass baking dish, sprayed with non-stick cooking spray, add shredded turnips, fiesta blend cheese, Parmesan cheese, eggs, garlic powder, onion powder, and salt and pepper.  Mix together.  Pour melted butter over all and mix in.  Bake 30 minutes or until lightly browned.

4 Servings/Per Serving: 254 Calories; 20g Fat (71.8% calories from fat); 11g Protein; 7g Carbohydrate; 2g Dietary Fiber;

  1. Wow, sounds incredible! Now I need to find turnips. So cool that you guys also like that meat loaf. It's my favorite too.

    1. I should add one little hint that I do to turnips to make them not so "turnipy" tasting, ha ha. I soak them in cold water with some drops of sucralose for about 30 minutes. It does not make them sweet but just takes out the bite and makes them more potatoey like. :) Thanks Jen!

  3. Feeling just a little dense here. When you say turnip do you mean rutabagas or do you mean white turnips? Where I live on the edge of the world the price difference between the two is phenomenal!

      Rhutabaga has more carbs and has more of an orangish color to it. Turnips are white with some purpose on the skin. Inside they are all white. Hope that helps. :)

    4. It's just that many people use rutabaga and turnip interchangably. Here on the edge of the world rutabagas cost about .49/lb while turnips cost 1.99/lb!! So depending on what the food budget looks like, I sometimes just spend the extra 3 1/2 ish net carbs.

  4. Differences in carbs:
    Rhutabaga: 1 cup 11.38 g carbs, 3.5 g fiber
    Turnip: 7.6 g carbs, 2.19 g fiber
    Parsnips: 23.33 g carbs, 6.35 g fiber

    You can see there is quite a difference!

    1. I just shred it by hand with a hand grater, but if you have a food processor you can shred it that way too. My shredding blade broke! I hope you like it.

  6. I was thinking, for people who do not have turnips, I bet this would work with shredded cauliflower just fine also.

  7. Had some blood work done to check my cholesterol levels. Went down 62 points and the good cholesterol went UP! Proof again that living low carb works! Pass the bacon please!

    1. That's so great Lynn Marie! Thanks for sharing that! :) We've been so brainwashed in this country to think fat is the enemy, and all the while eating gobs of sugar! Proof after proof people find when they go low carb and eat more fat that they are healthier.

  9. Hello! Looks delish, but I was wondering if it would still turn out if I would lessen the amount of butter and cheese. I follow a low carb/high fat diet, but I would like to keep the fat down somewhat....Thanks!
